Something that I love during the cooler seasons is warm bowls. I love having warm grain bowls and warm noodle bowls to warm me up. On a cold night, a warm bowl can sometimes warm you up like a good warm blanket.
A bowl always has to start with a good base. A few of my favorite bases are:
- Brown rice
- Cauliflower rice
- Brown rice noodles
- Konjak noodles
- Cassava flour noodles
For this bowl, I used cassava flour noodles. Cassava is a root vegetable that can be made into a flour. It works amazing as a white flour alternative. I love it because it is paleo friendly, grain free and gluten free. You can use any noodles or base that you would like.
I also used mussels and shrimp for my protein option. You can sub in any shellfish, meat option, or tofu.
You are going to love this recipe. I promise it will warm you right up!
Yields 2 servings
noodles (or other base) cooked to your liking and drained
2 green onions sliced (leaving out the dark green for garnish)
2 carrots diced
1 zucchini diced
3/4 cup vegetable broth
4 tbsp sriracha (sugar free)
4 tbsp coco aminos
pinch of paprika
seafood (rinsed and cleaned),(or protein of choice prepped)
2 tbsp avocado or olive oil
Set your noodles/base aside. Heat up your oil over medium heat in a stove top pan. Then add green onions and sauté for 1 minute. Then add the carrots and sauté another 2-3 minutes. Then add the zucchini and sauté another 2 minutes. Then add the broth, sriracha, coco aminos and paprika. Cook for 5 minutes. Then add your protein and cook until the protein is completely cooked. Add in noodles/base and toss until they are evenly coated. Transfer to a bowl, garnish with the rest of the green onion and enjoy!
